&lt;p&gt;2  cups unsoaked cashews&lt;br/&gt;8-13  medjool dates pitted (not soaked)&lt;br/&gt;vanilla&lt;br/&gt;Blend cashews with water.add dates (when smooth) until sweet enough.&lt;br/&gt;Add vanilla.&lt;/p&gt;
&lt;p&gt;&lt;strong&gt;Carrot Cake&lt;/strong&gt;&lt;/p&gt;
&lt;p&gt;1/2  cup raisins, soaked 20 minutes, reserve liquid&lt;br/&gt;1/2  cup dried apricots, soaked 20 minutes&lt;br/&gt;2  cups pecans or walnuts&lt;br/&gt;2  tablespoons pine nuts&lt;br/&gt;1&amp;#160;1/2  cups coconut (dried, unsweetened, shredded)&lt;br/&gt;1  teaspoon cinnamon&lt;br/&gt;1/4  teaspoon Chinese 5 spice powder&lt;br/&gt;1/2  teaspoon garam masala or cinnamon&lt;br/&gt;pinch  clove optional&lt;br/&gt;pinch  nutmeg optional&lt;br/&gt;6  cups carrot pulp-&lt;br/&gt;1&amp;#160;1/2  cups chopped dates&lt;/p&gt;
&lt;p&gt;Food processor combine:&lt;br/&gt;pecans, pine nuts, until consistant fine.&lt;br/&gt;Pulse coconut, until mixed in.&lt;br/&gt;Add spices, pulse until mixed. (set aside).&lt;/p&gt;
&lt;p&gt;Juicer alternating combine:&lt;br/&gt;carrot pulp,&lt;br/&gt;raisins,&lt;br/&gt;apricots,&lt;br/&gt;dates, until  through.&lt;/p&gt;
&lt;p&gt;Knead until mixture evenly combined. Add nut mixture a little at a time, kneading in.&lt;/p&gt;
&lt;p&gt;Line 2 round cake pans with saran wrap (oil the pans first).&lt;br/&gt;Put mixture in pans, pack in.&lt;br/&gt;Refrigerate until ready to frost.&lt;/p&gt;
&lt;p&gt;Makes 8 cups, or 10-16 servings&lt;/p&gt;

&lt;p&gt;From left to right&lt;br/&gt;- An assortment of nuts &amp; a few pieces of dried apricot.&lt;br/&gt;- Fresh Pineapple. NOM&lt;br/&gt;- Mesculan mix, Sprouts, Yellow Bell Pepper, Spring Onion, 1/4 Lemon&lt;br/&gt;- 1/2 Carrot, 2x Small Tomatoes, A chunk of Cucumber, 1 Radish (all to go in the salad) and a mandarin, a kiwi, an apple and a fejoa.&lt;/p&gt;

Life has been quite busy in that non interesting just doing stuff that needs to be done kind of way&amp;#8230;&lt;/p&gt;
&lt;p&gt;I&amp;#8217;m super excited because on Friday my hubby decided he would like to buy me some new tights &amp;#8230; so we ordered a pair of galaxy and a pair of winter &amp;#8230; like these:&lt;/p&gt;

&lt;p&gt;Except the winter ones are in different shades &amp;#8230; lighter whites and tans.&lt;/p&gt;
&lt;p&gt;Super excited for them to arrive.&lt;/p&gt;
&lt;p&gt;Tonight he is attempting to make homemade almond butter. He has just dry roasted the almonds and we are now listening to them pop!&lt;/p&gt;
&lt;p&gt;And now he&amp;#8217;s folding the laundry while i&amp;#8217;m sitting by the fire being a lazy arse :/&lt;/p&gt;
&lt;p&gt;Have been reading a lot about raw food and eating an alkaline diet for many obvious health benefits so this week the mr and I will try out some new raw recipes and see how that goes.&lt;/p&gt;
&lt;p&gt;I&amp;#8217;m quite looking forward to it!&lt;/p&gt;
